The Culinary Uniform: What Purpose Each Piece Serves

The Culinary Uniform: What Purpose Each Piece Serves
If you’ve never spent a lot of time in a restaurant kitchen, you may think that the culinary uniform is outdated, stuffy, and pointless, but you could not be more wrong.

While the look of the traditional uniform is, in fact, stark and severe, the usefulness of it is not. Each piece serves a specific purpose, and every detail from the design to the fabric is not to be overlooked.

Jacket

This is perhaps one of the most important parts of your uniform, and also your biggest investment, but if you’re new to the restaurant industry, you may not know why you need it.

First, let’s take a look at how most chef’s jackets are made; they’re not just plain old cotton jackets. Made of double thick cotton, the fabric is designed with safety in mind. While cooking in a home kitchen is relatively safe and even therapeutic, a restaurant kitchen is a different story. You’re working with commercial equipment, heavy tools, and extra hot surroundings. It’s very easy to bump into someone and have hot liquid splattered onto you, and lifting a steamer lid just a second too soon because you’re trying to get dinner service started on time could mean you’re assaulted with steam. It’s also not unheard of to get a little too close to the burner when testing your house made pasta sauce, and if you were wearing street clothes, you could easily catch your sleeve on fire. A good quality chef’s coat won’t let that happen.

While a chef’s jacket isn’t magic, the fabric it’s made of can help protect you from severe injuries. Modern technology has made it possible to create fabrics that not only protect you from burns and stains, but also keep you cool and comfortable, because as you probably know, a professional kitchen can get hot. Cool Vent Technology from Chef Work’s makes you forget how hot you are so that you can do what you do best: Cook.

You think safety is the only reason to wear a chef’s jacket? Not quite. In addition to protecting you from the perils of the professional kitchen, a chef’s jacket makes you look professional. Usually in bright white, it lets those around you know that you take your job seriously, and that you’re not just a short order cook in a roadside diner, but a chef.

A classic chef’s coat is designed so that if you spill something on yourself, you can keep going. The double breasted style with two rows of buttons down the front allows you to cover stains by simply switching the top and bottom layers should you have to head out to the dining room for any reason.

If you are new to the industry, you may not think you need a chef’s coat, but after a few hot nights, and maybe a burn or two, you’ll change your mind quickly.

The Significance of the Chef’s Uniform

The Significance of the Chef’s Uniform
We love to watch hectic kitchen scenes with all those frenetic activities of people in white- cutting, peeling and frying ingredients that are needed to complete an order.  Somehow, it’s different if those blur of activities aren’t done in white.  Here’s a closer look at a chef’s uniform—its significance, and a little bit of history.

One great way to professionalize the look of your restaurant kitchen is the use of chef uniforms.   Many of us love watching hectic kitchen scenes with all the frenzied cutting, peeling and frying when the cooks are rushing to complete a customer’s order (think Catherine Zeta-Jones and Aaron Eckhart in the chef movie No Reservations).  The frenetic rush of activities of people in white somehow becomes more intriguing and fascinating in the eyes of an outside spectator.  All that rush, however, would seem different if the workers running to and fro aren’t wearing their uniforms.  It’s also intriguing to know that each facet of the chef’s uniform has its practical reasons.  Having said that, let’s have a closer look at the significance of a chef’s uniform:

Chef’s coat.  The white coat signifies cleanliness, whereas the thick cloth shields the chef from the heat coming from the stove and oven.  It also guards him from the splattering of boiling liquids.  The double-breasted jacket is meant to conceal dirt and stains when it is overturned.  In traditional chef’s clothes, knotted cloth buttons are used because they survive numerous washings and they endure contact with hot items without melting.

The modern chef’s coat could now be short sleeved, long sleeved or ¾ sleeved.  Designs vary – some have black piping while some have black contrasts.

What Are Chef Presentation & Uniform Requirements?

What Are Chef Presentation & Uniform Requirements?

The excellence of a kitchen demands perfection not only in the food, but attention to sanitation and hygiene issues from those preparing it. Chefs working in a food establishment – whether it's fast food or fine dining – face specific requirements for uniforms and presentation. These requirements might vary depending on the establishment, type of food and state health department requirements. Regardless, following general guidelines showcases professionalism from the individual doing so.

Chef's Coat
A traditional, white chef’s coat is recognizable and lets customers and other employees know who belongs in the kitchen. It also serves as an important tool. Chef’s coats are made from heavy cotton, which protects the chef from the heat of kitchen appliances, such as ovens and stoves. The knotted buttons slip off easily, but do not melt or potentially pop off and land in food. White is the preferred color because it may be bleached if it gets stained by food, typically a daily occurrence.

Chef Uniform
In addition to a chef's coat, a kitchen uniform typically consists of pants and a hat. Pants should have a straight leg, be hemmed to the top of the shoe and made from cotton. Shoes must be fully enclosed and skid-resistant, because kitchen spills are common. For the same reason, fabric or open-toed shoes are never permitted in the kitchen. While working, chefs must wear an apron – these may be waist or full bib style, depending on the kitchen’s requirements. Chef’s hats may be paper or cloth-style. Fine dining establishments may require their chefs to wear a neckerchief.

Personal Hygiene
Chefs come into direct contact with raw and prepared foods that are served to patrons, which requires them to maintain good personal hygiene at all times. Good hygiene habits include frequently washing hands – especially after exiting and entering the kitchen; brushing teeth; bathing daily; and ensuring that you're in good health before going to work. Cover cuts, sores and wounds with waterproof bandages and single-use, food-safe gloves. Chefs with stomach flu-like symptoms – vomiting, diarrhea or high fever – are not permitted to work.

Chef's Jackets: Why Are They White?

Chef's Jacket Overview:

The traditional white chef's jacket is among the most recognizable pieces of clothing in the world. But there's more to that unique design than you might think.

Chefs are a practical bunch, and the white chef's jacket is more than just a uniform — it's also an important tool, and each of its distinctive features serves a specific purpose.

Keep Your Cool:

Kitchens are hot places, and the heavy cotton helps insulate you from the searing heat of stoves and ovens, while remaining "breathable" enough that your body's heat can still escape.

Long sleeves help protect arms from burns while reaching across stove burners or into ovens. Cotton also absorbs liquids. Cooks are taught to quickly strip off their jackets if they spill hot oil on themselves, because the jacket absorbs the hot liquid instead of letting it pass through to the skin.

Even those knotted buttons serve a purpose. Ordinary buttons can melt or break, sending fragments into an unsuspecting diner's food.

Knotted buttons also slip off more easily in the event of a hot oil emergency as described above.

A Vision In White:

White is the most reflective color, so a white jacket literally repels heat instead of absorbing it, keeping you that much cooler than if you were wearing a darker color — and in a hot kitchen every degree makes a difference.

Plus, when it's laundry time, white cotton can be bleached, so no matter how badly stained a jacket gets, bright white is just a wash away.

Reverse The Curse:

That double-breasted style is more than just a fashion statement. Along with the double breast are double rows of buttons, so if the front of the jacket gets stained, a cook can reverse the flaps and reveal a fresh, clean outer layer.
